Method

  • Step 1. Bring a large pot of water to a boil. Drop the potatoes, boil for seven minutes, then drain.

  • Step 2. Heat the oil in a large nonstick skillet and brown the boiled potatoes, rotate to ensure potatoes brown evenly. Remove potatoes and set aside.

  • Step 3. In the same skillet, add garlic and cilantro and cook for three minutes.

  • Step 4. Place the potatoes back in the skillet and mix with garlic and cilantro, cook for another two minutes.

  • Step 5. Sprinkle the cayenne pepper, coriander, and salt over potatoes. Remove from heat and serve.
