Avocado, Tomato, Cucumber & Bread Salad

Step 1. Preheat the oven to 180°C.

Step 2. Place the bread on a small baking tray and brush it all over with oil. Bake, turning once, for about 20 minutes, or until golden and crisp. Let it cool, then break into large pieces and set aside.

Step 3. Halve and see the avocado then remove the flesh and cut into 1cm pieces. Cut the cherry tomatoes in half and thinly slice the red onion. Trim the cucumbers then cut into 1cm pieces.

Step 4. Place the avocado, tomatoes, cucumber and onion in a bowl and toss gently to combine well. Drizzle with the oil and vinegar and season to taste with sea salt and freshly ground pepper. Transfer to a platter or bowl. Crumble the feta then scatter it over the salad with the broken toast and parsley, then serve.
