Method

  • Step 1. Preheat the oven to 180C.

  • Step 2. Using an apple corer, remove the cored from the apples then brush a little lemon juice into the cavities to prevent the flesh from turning brown.

  • Step 3. Finely chop the walnuts and dates. Combine them in a bowl with the almond meal, salt, spices, verjuice, sugar and melted coconut oil and mix well.

  • Step 4. Divide the almond mixture among the apple cavities, spooning any excess neatly over the tops of the apples.

  • Step 5. Cover the tray of dish loosely with foil. Bake for 30 minutes, then remove the foil. Bake for another 15 minutes, or until the apples are very soft and are starting to collapse and filling the dark golden.

  • Step 6. Cool slightly then serve with yoghurt, cream or crème anglaise.
