Moorish Nutty Chocolate Chip Cookies
These chocolate chip cookies taste so good you won't believe they're full of good stuff. Free from refined sugar, eggs and flour, these chocolatey cookies fit the bill perfectly when you're craving something for your sweet tooth. A mix of two recipes from a couple of my go-to cookbooks Hemsley & Hemsley Good & Simple and Supercharged Food For Kids by Lee Holmes, I decided to make these with my cookie-loving son Sammy so that we had a more nutritious option in the house - and not just for him! I have to say there's nothing I love more than a cup of coffee and a delicious biccie.
Super easy to make and ready in about 10mins, get ready to grab a cuppa and take a load off.
Method

Step 1. Preheat oven to 175°c and line a baking tray with baking paper.

Step 2. In a large bowl combine the almond meal, bicarbonate of soda, cocoa and salt. Add the remaining ingredients except the chocolate chips/ cocoa nibs and work into a soft dough.

Step 3. Spoon tablespoons of dough onto the lined baking tray and flatten with your hand or back of a spatula ( each cookie should be around 5cm wide). Press chocolate chips / cocoa nibs into the cookies.

Step 4. Bake for about 8-10mins. Remove from the oven and allow to cool so they set. Note: They will be soft when they come first come out of the oven.
