Yummy Corn, Zucchini & Feta Fritters
Vegetable fritters are a staple in my fridge. Great for lunches or a meat-free dinner they're easy to whip up and good for babies too. I hate anything going to waste, so when I found myself with one zucchini, fresh corn and some feta that needed to be used up quick smart, I appropriated this Bill Granger corn fritter recipe I'd made recently and the results were delish. Enjoy!
Method

Step 1. Put your corn, grated zucchini mixture and onion in a bowl Take two cups of the mixture and put into a blender or food processor with the two eggs, salt and pepper. Puree until lumpy, not completely smooth.

Step 2. Add back to the remaining corn and zucchini, then add in the flour, baking powder and feta and stir with a wooden spoon until just combined.

Step 3. Heat olive oil in a fry pan over a medium high heat. When the oil is hot, add 2 heaped tablespoons of mixture per fritter into the pan and cook in batches for 1 1/2 minutes each side, or until golden.

Step 4. Line a plate with paper towel and transfer to there to drain off oil. if you wish you can keep warm in a very low oven until serving. Yummy hot and crispy or cold the next day.
