Method

Step 1. Bring a large pot of water to a boil. Drop the potatoes, boil for seven minutes, then drain.

Step 2. Heat the oil in a large nonstick skillet and brown the boiled potatoes, rotate to ensure potatoes brown evenly. Remove potatoes and set aside.

Step 3. In the same skillet, add garlic and cilantro and cook for three minutes.

Step 4. Place the potatoes back in the skillet and mix with garlic and cilantro, cook for another two minutes.

Step 5. Sprinkle the cayenne pepper, coriander, and salt over potatoes. Remove from heat and serve.
