Banana Bread With A Coconut Twist

In my home it's inevitable that there will be ripe bananas at the end of the week. I love nothing better than cup of coffee with a warm piece banana bread - especially on a Friday afternoon or the weekend. This super simple recipe incorporates Australian bananas, coconut and offers a gluten-free option too. Yum!

Method

  • Step 1. Preheat the oven to 170°C.

  • Step 2. Grease and line a large loaf tin (approx. 24 cm x 10 cm).

  • Step 3. Mix the bananas, sugar, eggs, oil, coconut milk and vanilla essence in a bowl.

  • Step 4. In a separate bowl, mix the flour, desiccated coconut and baking powder.

  • Step 5. Combine the two mixtures and pour into the loaf tin.

  • Step 6. Bake for 45-50 minutes or until a knife inserted in the centre comes out clean.

  • Step 7. Don't forget, for a gluten-free version of this recipe, replace the plain flour with 1 ½ cups (160 gm) of gluten free flour and 1 cup of almond meal.
