Yummy Corn, Zucchini & Feta Fritters

Vegetable fritters are a staple in my fridge. Great for lunches or a meat-free dinner they're easy to whip up and good for babies too. I hate anything going to waste, so when I found myself with one zucchini, fresh corn and some feta that needed to be used up quick smart, I appropriated this Bill Granger corn fritter recipe I'd made recently and the results were delish. Enjoy!

Method

  • Step 1. Put your corn, grated zucchini mixture and onion in a bowl Take two cups of the mixture and put into a blender or food processor with the two eggs, salt and pepper. Puree until lumpy, not completely smooth.

  • Step 2. Add back to the remaining corn and zucchini, then add in the flour, baking powder and feta and stir with a wooden spoon until just combined.

  • Step 3. Heat olive oil in a fry pan over a medium high heat. When the oil is hot, add 2 heaped tablespoons of mixture per fritter into the pan and cook in batches for 1 1/2 minutes each side, or until golden.

  • Step 4. Line a plate with paper towel and transfer to there to drain off oil. if you wish you can keep warm in a very low oven until serving. Yummy hot and crispy or cold the next day.
